This four-day event, which took place from October 24 to 27, 2023, in Dubai, represented a pivotal step towards establishing a lasting legacy for the upcoming COP28 in the UAE and beyond.
The Climate Conscious Catering workshop is an initiative by the Ministry of Climate Change and Environment under the guidance of HE Mariam bint Mohammed Saeed Hareb Almheiri, Minister of Climate Change and Environment and Food Systems Lead at COP28 UAE aimed to invigorate, enlighten, and encourage the implementation of climate-conscious catering practices that can leave a meaningful, enduring impact on our planet and people.

The workshop featured talks and panel discussions from local food producers, scientists, nutritionists, sustainability experts, and the COP28 team. Their insights and expertise provide attendees with a comprehensive understanding of the multifaceted approach required to achieve climate-conscious catering. This ambitious strategy, which has not been implemented at a COP before, has a core commitment to limit the carbon intensity of food served (including a 1.5°C aligned menu option) and focuses on water intensity, nutrition, portion sizes, and minimising waste.
